A famous Tempura restaurant in Okinawa that only opens twice a week on Saturday and Sunday. There are only 2 items on the menu: Tamu Tempura and Sata Tempura.
In spite of that, I mean, because of that, it is a restaurant in Kin I urge you to try.
Heikichi Yamashiro manages this restaurant with his wife. The secret to his health at age 74 is billiards. He goes to a pool hall in Shinkaichi, the only business district in Kin-cho, on weekly basis to maintain his health. His main profession is a Tamu farmer. He grows Tamu and rice on his land in Kin-cho. He is a symbol of health.
I did not waste any time to try Tamu Tempura. It was smooth and crispy on the outside, and a gentle sweetness spread through my mouth. The ingredients are Tamu and sugar. The key is to dust the surface with tapioca powder.
Yamashiro remarked, “I’m trying many things.” As a tempura made with only a couple of ingredients, the quality and the proportions of the ingredients dictate the flavor.
As the saying goes, “since it is made using a traditional recipe, it will not keep long,” it is a local dessert that would be hard to transport. Its simple and gentle flavors are worth a try.
